Four Easy Freezer Meals from Leah

These meals are great to make one day when you have a little extra time. Just throw them in the freezer and then bring them down to thaw in your fridge when you're ready to cook them. I also like to give these meals to new parents - I split the recipe into 2 8x8 pans instead of 1 9x13 - I cook one and bring for them to eat right away, then leave the other uncooked for them to freeze for a later date.

Lasagna
1 box Barilla brand No Boil Lasagna Noodles
1 Egg
1 16 oz. container Ricotta Cheese
4 C. Mozzarella Cheese
½ C. Parmesan Cheese
1 pound Spicy Ground Sausage (or Beef)
2 jars Barilla brand Marinara Sauce

*Follow the directions on the lasagna noodle box. If you have a small family (like me), split the lasagna into two 8x8 pans so you can use them separately.

Crescent Chicken Casserole
3 oz. Cream Cheese, softened
1 T. Butter, softened
1 large can Chopped Chicken (or 2 C. cooked chicken breast, chopped)
1 T. Minced Onion
1/4 t. Salt
1/8 t. Pepper
2 T. Milk
1 (8 ounce) package Refrigerated Crescent Rolls
1 T. butter, melted
½ C. Seasoned Bread Crumbs

In a small bowl, combine Cream Cheese and Butter. Add Chicken, Onion, Salt, Pepper and Milk. Lay down 4 of the Crescent Rolls, flat, in greased 8x8 pan. Spoon mixture evenly over rolls. Top with remaining four Rolls, flat. Drizzle Melted Butter over top, then sprinkle with Bread Crumbs. Bake in a 350º oven for 25-30 minutes, thawed.

Chicken Enchiladas
1 large can Chopped Chicken (or 2 C. cooked chicken breast, chopped)
1 can Condensed Cream of Chicken Soup
½ C. Sour Cream
1 8 oz. pkg. Shredded Cheese (I prefer Mexican, but whatever you like)
6 10”-12” Tortillas
1 ½ C. Salsa

Mix Chicken, Soup, Sour Cream, and 1 cup of Cheese until well blended. Mentally divide the mixture into 6 parts. Scoop into center of each Tortilla; roll up. Place, seam side down, in greased 9x13-inch baking dish. Top with the Salsa and remaining Cheese. Bake in a 350º oven for 25-30 minutes, thawed.

Individual Meatloaves
Meatloaves:
1 Egg
2 pounds Ground Beef
¾ C. Ketchup
1 C. Italian Style Bread Crumbs
2 T. Parsley
2 T. Minced Onion
1 t. Ground Mustard
½ t. Seasoning Salt
Topping:
½ t. Basil
½ t. Oregano
¼ C. Ketchup

Combine ingredients for Meatloaves. Shape into 8 small loaves and place in a greased 9x13 pan. Combine ingredients for Topping and spoon over loaves. Bake in a 375º oven for 35 minutes, thawed.

Great recipes, Leah! I love having meals in the freezer that my family can eat OR I can give away. It is amazing what meals freeze well--Nathan and I have learned what we enjoy just by trial and error :-) Lasagna and enchiladas are always great! www.myrecipes.com has many different meals that you can freeze as well (just search for them).

thanks for the great recipes! I love how easy they are. I really want to get better at freezing meals ahead of time. It is so nice to be able to pull them out on a busy day. :)

Leah thanks for the information on the ring slings I made 4 last night with matching nursing covers that our reversible with matching and contrasting fabric to the sling....Thanks so much they turned out so cute....AJ
